Balancing Our Plates

There’s something special about the Fridays I have my girls all to myself. For some reason it feels different feeding them on those days. I guess because I don’t make lunch for them any other day of the week. Actually, when I have the chance to make lunch for the whole family, that’s an even better feeling! On the weekends we often go out for lunch, but when we get to have lunch as a family at our own table, I just love it!

We’ve been making lots of salmon salad lately. A few weeks ago Dan was eating a sandwich and said, “Yeah, tuna salad is really good. I like this; could eat it all the time”. Yep, it was salmon salad made just like traditional tuna salad would be, with mayo, pickles and celery. He even knows that, he just doesn’t like the idea of it, so I think that’s why he still calls it “tuna salad”.

Last weekend I made salmon salad with bell pepper, yogurt, apple and celery. Sara had it with a little 100% whole wheat bagel, baby carrots, cherry tomatoes and oranges segments, so that she had a balanced plate.

And I had it over salad greens and with black beans for my balanced plate.

I was super hungry that day since we ate lunch after I ran; so we quickly followed those balanced plates up with this balanced snack of graham crackers, peanut butter and apples slices.

Do I always eat this way? Pretty close. But I have to admit that focusing on balancing our plates has improved what we’ve been eating. Without focusing on adding veggies and fruits, I probably wouldn’t have gotten the baby carrots, cherry tomatoes AND oranges onto our plates. And I may have even skipped the greens on my salad and just had salmon salad by itself. I also may not have added apples to the graham crackers with peanut butter. What would the result have been? I would have been way hungrier and eaten more graham crackers and peanut butter…essentially swapping good stuff for empty calorie graham crackers.

When I look at these pics I know we have it right! Lots of color, nearly all unprocessed foods, a variety of plant-based foods and a huge smile from Sara!
