Admittedly, this okra was destined to be delicious. It was tender and fresh, direct from my Dad’s garden, and picked with love by my Mom and two little girls. How could it not have been the best okra I’ve ever had? Plus, the super simple prep and high heat roasting brought out the flavors and gave the okra an awesome texture.

Before the summer is over, get yourself some okra and throw it in the oven! This is a great side and a surprisingly satisfying snack.

Crispy Okra

Okra contains soluble fiber, which helps to control blood sugar levels after meals. Okra also serves as a probiotic, supporting healthy gut microbe balance and proper digestion. Learn more about okra and find out why it is called "plant viagra"!

Ingredients

  • As much okra as you can eat
  • Extra virgin olive oil
  • Salt and pepper

Instructions

  1. Preheat oven to 425 degrees.
  2. Cut off the ends and tips of the okra.
  3. Cut into bite size pieces.
  4. Toss with olive oil, salt and pepper.
  5. Place in a single layer on a baking sheet lined with parchment paper.
  6. Roast for 15-20 minutes. Push the okra around after about 10 minutes.
