"Kick the Can[ned]" Cream of Mushroom

Thanksgiving is by far my favorite holiday. It has become a tradition for my mother’s family (of 50+ people) to gather on this day. I have countless memories of getting into trouble with my many cousins and eating too much pie, but the one that sticks out most is the year there was no green bean casserole. This had been my favorite Thanksgiving dish since before I could remember and I was devastated to see it missing. From that year on it has been my responsibility to make the green bean casserole for 50+ people.For many years I was one of the people who thought traditional family meals were not to be tampered with. It was only a few years ago that I finally decided to “kick the can[ned]" cream of mushroom. The success of my “healthified” casserole gave me faith that there is room for alteration in family favorites without sacrificing flavor…and maybe even increasing it!
