Diving Into Diabetes with Unprocessed Carbs

Carbohydrates get a bad rep these days. Whether it’s a fad diet that says you can never eat bananas again or potatoes will make you fat, it’s time we set the record straight. Our bodies need carbs. Period. Carbohydrates are oh-so-necessary for our cells to function and I’m here to tell you why.

Glucose finds its way into fruits and veggies though a process called photosynthesis. Ringing any bells? You may remember this from middle school science, but I’ll give you a quick recap. Plants capture energy in the form of sunlight, combine this energy with water and carbon dioxide, resulting in the creation of glucose and oxygen. Plants then use these glucose molecules to create larger (complex) carbohydrate structures. Our gut digests these larger carbohydrates breaking them down into glucose, once again. The primary role of glucose in the body is to provide our cells with an energy source. It is also used to create other compounds in the body, such as amino acids (the Lego pieces of protein) and fatty acids for long-term energy storage. Carbohydrates are even an actual component of our DNA!

This being said, it’s important we choose our carbs wisely. The amount of processed and refined carbohydrates available in stores is growing exponentially, making it easy to forget about foods that have been there all along: our tried and true, unprocessed, nutrient-rich carb-dense foods. One food included in this category is the Parsnip, which in my opinion is over looked far too often. This white root vegetable has the shape that resembles a large carrot. It has an earthy, shockingly sweet, and almost nutty flavor. Parsnips provide carbohydrate in wonderful package along with potassium, vitamin, folate and antioxidant phytochemicals.
